The Other White Meat




Despite the threat of rain and the incredible humidity, I opted to grill some chops for dinner. I used some mustard as a base, a quick rub, and mopped occasionally as the pork cooked - the same technique I use for ribs. I used lump charcoal for fuel, some hickory chunks for flavoring, and indirect heat to keep the sugars in the rub from burning. Meanwhile I had some Asparagus in the steamer.

I had some company whilst grilling and managed to get a shot or two (only used a camera FairScape) of the little guys.

I know you remember that before 1970, pork grease was actually considered a food item.

p.s. Your hummingbird feeder has a broken yellow flower. You really should fix that. They give you extra ones in the box you know!!!

PK Don't shoot them and Don't net them either! Fix that fake plastic flower, it disturbs my sense of the esthetique.

The birds don't mind the flower, it stays.

The only soy I do is in soy sauce (except for the bean curd in the Wor Wonton Soup)

Lard is still big out here, they use it in Tortillas and Tamales, though you can get some that are "fat free" or use vegetable shortening..

I use whiskey in my BBQ sauce. refried beans, and roasted garlic mashed potatoes.

CS: COme on down! If you aren't doing anything over the Fourth I am going to BBQ some ribs, I have some old wine barrel staves I am going to use for smoking the meat.

I grilled some salmon steaks tonight . I like em with sundried tomato and olive oil .

Maybe I'll have some pork chops this weekend .
