The Fourth of July Come n' Gone

Look pretty happy to be wearing these goofy hats, eh?

The Fourth of July weekend, trip to the lake, fireworks, parades, time to fire up the grill, and embarrass the dogs. I didn’t do the lake or the parade, but the fireworks have been going off in the neighborhood for the past several nights, so I am covered there and do have pictures of huskies in dignity crushing hats, as you have seen.

BBQ’d a Pork Butt for some Carolina Style Pulled Pork. It takes 6-8 hours at around 200 degrees, constantly replenishing wood chunks and charcoal, but it is worth the effort.

I started out with my pork butt (AKA pork shoulder – don’t ask) injected it with a mix of apple cider vinegar, cayenne pepper, and brown sugar, then applied a mustard base, followed with a spice rub.




Placed it on the grill using indirect heat, coals and wood chunks on either side of the meat and a pan of beer directly under (helps with moisture and flavor)



Took it off when the pork was falling off the bone and internal temp was 170-180 degrees. At this point it looks like a meat meteor with a thick burned sugar “bark”.



Use a couple of forks to separate the meat, or “pull it” and we’re good to go.

Those hats made me get all cooey, and I'm not even there to pet them.

That Pork ass looks tastey. I grilled for the first time yesterday what turned out to be charred out chicken. A little help from the propane, the rest from dried out sticks. A smokey beginning, and a shitty end product. Oh well. You can come BBQ for us next time.

Cherry: If we all get together and have a virtual Blog picnic I think we're set. You can bring the wine - dry red, please.

FS: Not sure what those lyrics were fomr - not old enough I guess. BEtween you and Jin I am goign to have to find some veggie recipes to try. There's an Italian version of Egg Drop soup (ol' Marco Polo really put the snatchies on China's recipes) I want to try. Might have to modify the broth, though, I think it is chicken. If you guys did fish we'd be in there.

CS: Two words: Beercan Chicken. USe a whoel chicken next time, shove a half full beer can up the large cavity and grill with low indirect heat. The beer will help keep the chicken moist and add flavor. You can also try a brine on the bird prior to cooking.

How DID you know what TVP was, phos? If its done well, you know, it tastes really good, however, done poorly-ewww it can be really awful! lol.
