Smoking can be good for you
I have a real passion for barbecue and spend a lot of quality time with my grill. A beer in one hand and a rack of ribs in the other seems to be a pretty good way to spend a sunny AZ day. True it takes a long time for the meat to cook, time to absorb the smoky goodness from the wood, time to grow moist and tender, but good things can seldom be rushed.
I have pretty much conquered all the usual meats, including, with the help of my brother, brisket. The next thing I want to attempt is to make, cure, and smoke my own hotlinks. Hard to beat a good smoked hotlink sandwich...

smoking meats are cool.
Worked for a genius of this gig. Smoked turkeys with the right seasoning, cut the meat, tastes like ham.

See, he'de do a cook over a day to meet the catered event (that's what he was) and the meat would still be just a lil pink at the bone.
But it was fall away meat, sometimes.
good stuff, but I'm not generally that patient, which is funny. I have a flock of stuff I cook "Lazy Man's" style.

I altered it a bit...I had a big ol' pork roast..
but the coffee was the absolutely coolest piece of meat I have ever cooked inside and tasting like it came off the grill!
Thing is, part of it IS the smoke, and I don't mean slow cooking kind.
Put the fire ON! and give it a fast sizzle on all sides, throw in a splash of coffee, wine or whatever, cover, turn it to an oven just like Auntie describes (did I mention start in a steel skillet?)
With pork I go for check it before it's done
I use a three inch way too sharp paring knife to slice in...look for color, smell, and I poke freshly peeled whole garlic cloves into the holes.
I experiment with different seasonings, but, moxnix ... I slice it as thin as I can when it's done.
Auntie has a winner there.

Ever tried beef ribs, Phos? I'd imagine you'd want to cook 'em a bit quicker.

I've used beef ribs in stew, but they'd be good smoked as well. Might have to pick some up. As far as eating a lot, I have to in order to keep my svelte boyish figure. That is the problem with bbqing large pieces of meat - lots of leftovers.

Y'know... the only thing I regret about being a vegetarian is the whole barbecue thing. I don't miss fast food and I don't miss fried and grilled meat. But a barbecued anything is always awesome.
You can grill fruits and veggies, they come out great, but they aren't going to taste like a rack of babybacks.

I tell you what, ask your husky, I bet he'd rather be here than sweating his fir off where you guys hide out!
Yukon is pretty happy as it is still cool at night (for here). He gets his own personal floor fan when the heat gets up there - right now it is in the 70s. and spring training for baseball has started. Austrella is a short haired kind of husky and loves to sun herself.
